The fall weather is making me really happy. The chilly nights are settling in, and soon we'll all be wearing sweaters, wrapped up in blankets, and comfort food will be on every table. One of those comfort foods for me is a warm cookie fresh out of the oven. Today I'm going to share a basic oatmeal cookie recipe in three variations. You'll learn to make 1. peanut butter and jelly oatmeal cookies, 2. salted caramel oatmeal cookies, and 3. cherry, walnut, and white chocolate oatmeal cookies. All delicious and incredibly easy to make.
Basic Oatmeal Cookie Recipe:
Mix in a medium size bowl-
1 3/4 cup all-purpose flour
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
Combine in a separate bowl-
1 cup (2 sticks) softened butter
1/4 cup sugar
1 1/2 cup packed brown sugar
2 large eggs
3 tsp vanilla
Mix everything together in a large bowl and then add 3 1/2 cups old-fashioned oats. Set aside the cookie dough. Pre-heat your oven to 350F and grease or line a cookie sheet. You're now ready for your toppings to the mix. My favorite part!
Optional Toppings 1:
1/2 cup Dried Cherries
1/2 cup White Chocolate
1/2 cup Walnuts
(Measurements for a full batch of cookies)
Optional Toppings 2:
1/2 cup Preserves (I used raspberry)
1 cup Peanut butter Chips
(Measurements for a full batch of cookies)
Optional Toppings 3:
1 cup Caramel Candies (cut in half)
1 tbsp Sea Salt
Coat the caramels in the salt for even distribution throughout cookies.

Dump your ingredients into the cookie dough and mix until combined. You are now ready to bake. Spoon 2 tablespoons of dough in a ball onto a greased cookie sheet. Tip: Use an ice cream scoop for an even, round cookie.
Bake until just browned, but still soft (about 12-14 minutes). Let cool on the cookie sheet for a couple of minutes before removing and placing on a cooling rack. Personally the only thing that could make these cookies any better for me would be a little cuddle time with Ryan, a visually striking movie, and a giant glass of milk.
