Right as Ryan and I returned to normal life after the honeymoon I dropped into a favorite thrift store and found a vintage goodie; "Quick and Easy: Meals for Two." While debating what to make for our sunday brunch that weekend I pulled out the "new" cookbook and found a recipe for a Puffy Dutch Pancake. We'd never heard of such a thing so we figured why not?
I was so excited to try this recipe out for two reasons, one because the recipe book was so darn cute, and two I got to use our NEW pistachio Kitchen Aid mixer for the first time! The recipe was really simple and only required a few ingredients. The ingredients you'll need:
1/4 cup Flour
1/2 tsp. Salt
1 tsp. sugar
1/2 cup milk
1 tbsp. butter
Preheat the oven to 450 degrees. After you've collected your ingredients throw them all into a bowl and using an electric mixer beat the ingredients together. The cookbook said, "The beating is most important." Then in a skillet melt a tbsp. butter over medium heat and pour the batter in. Heat for approximately 1 minute and then move the skillet into the preheated oven and cook for an additional 10 minutes until puffy and browned.
The recipe also recommended making a honey syrup, all you need is 1/4 cup honey and 1 tbsp lemon juice. Heat together in a small pan and set aside.
We added bacon to round out our menu and enjoyed our first homemade sunday brunch as a married couple. I'm looking forward to a lot more meals like this. big kiss, bekuh
